I cook a pan of rice with chicken stock cube, frozen peas, sweetcorn and spinach then drain and add some chilli flakes and soy sauce to flavour. Or couscous again with a stock cube and a grilled salmon fillet and steamed broccoli. Fry up or omelette, poached egg and spinach on toast.

I bought myself some portion sized Tupperware and make up ready meals with leftovers that I can microwave for a quick meal and write syns on the top. I currently have in the freezer 2 portions of spag Bol, beef stew with root veg & potato mash, chicken curry and rice, chunky veg & pasta soup and a portion of chilli and rice. They are a lifesaver for me when I've made kids/DH a non SW tea and run out of syns or want more than just a salad/jacket for lunch or generally CBA with thinking what to have for dinner!

Fry small pieces of onion, carrot, peas, chopped up broccoli, celery etc (or whatever you have in the house!) with garlic until slightly softened. Add turkey mince and fry until cooked, adding in some curry powder (to taste) and some soy sauce or smoked paprika or cajun powder etc, whatever flavours you like best. Meanwhile have a bowl of coucsous steeping to cook and when the other stuff is ready bang in the couscous and mix around. Yummy, filling and super quick...takes less than 10 mins
