I make quiches. 150g cottage cheese and 3 eggs. Fill silicone cake cases with mushrooms, peppers, ham, sweetcorn and top with blended cheese/egg mix and cook for about 20mins in oven. They taste great cold, I make some on Sunday and some on Wednesday to have for breakfast through the week.

Various ideas - the more substantial ones I tend to have on weekends and then have a minimal lunch. Lots can be made in advance and reheated/eaten cold

Baked beans with mushroom and onion
Yogurt and fruit/quark and fruit
Rice pudding made with almond milk (HexA or minimal syns) & fruit
Shakshuka/ huevos rancheros
Fry Up
Pancake or waffles made with oats and eggs (HexB)
Butternut squash and black bean hash with fried egg
Potato, bacon, mushroom and onion hash with fried egg
Mini breakfast muffins/ quiches as PP mentions above
Cloud bread breakfast sandwich (bacon, eggs, tomato, cheese for HexA)
Cereal and almond milk (minimal syns if you want to save your HexA)
Crustless pumpkin pie (new discover and new favourite)

Berries, quark and small portion of granola. Saving half hex b for later.
Raisin/apricot/cherry Wheaties.

Work mornings is porridge or eggs.

Days off tend to be fruit and yoghurt for a change.
