What are you having for lunch?

I had a loss of 2.5 lb this week, after a gain of 2lb, so not exactly spectacular. Anyway I am following sp this week to get back on track.

I often struggle with lunch as I rarely get an official lunch break - work for NHS. At home today so thought I would make an effort.

So I made ready cooked salmon added to last nights left over chickpea, courgette and mushroom in tomato sauce - rolled in an egg wrap with lettuce, beetroot, cucumber, apple. It was so delicious.

Does anyone want to share their lunch? I'd love some ideas for sp packed lunches especially.

I'm really boring and rotate a small number of lunches
Jacket potato with tuna and sweetcorn in fat free yogurt (had that today), or baked beans, or leftover chilli/bolognese
Vegetable soup - sometimes I add pasta, ham, butter beans, sometimes I have a ryvita to dip in it.
Salad with chicken, tuna, egg and low fat dressing

I take salad or soup to work.

I do make the crust less quiche sometimes, but it's hard to think what to make that I can eat without a fork and is not sandwiches.

I made scrambled egg with some cheese, ham and spring onion. Find it quite filling.

I had Turkey and yellow pepper sandwich, I had a three egg and feta omelette for breast takes minutes to make and saves my b choice. If I'm doing SP it's 2 b choices so always a sandwich lunch for me

"Muffins" made with bits of hamor cooked chicken, snipped spring onions, chopped red pepper spread between 6 muffin tins. Pour over 4 eggs beaten together with seasoning. Bake for about 15 mins until set. Lovely hot or cold. Can add a bit of cheese as HE A or syn.

I made a delicious dhal for supper last night and had some for lunch today. Best recipe I've ever found (it's a slimming one)

I've just had a jacket potato with prawns in a Marie Rose sauce (made with extra light mayo and ketchup, 2 syns) and salad. Some of my other lunches this week have included:
Chicken stir fry and noodles (cooked night before and reheated)
Pasta bolognese (as above)
5 ryvita rye cakes (HEB) with light cream cheese (HEA), grapes and cucumber
Salmon and boiled egg salad
Couscous with chicken and roasted veg in a tomato sauce
