What do you do for emergency dinners?

Hi all

You know those kind of days where you had a meal plan for dinner then you end up getting home later than you thought and that meal will take too long to make especially for STARVING kids. Well usually I'd say let's just get a McDonald's but now I'm on week 2 of sw and doing really well I don't know what to do on days like this.

I haven't got a big freezer to keep lots of ready meals in and annoying to have to then go and prepare another type of meal especially if it's near food shop day and I don't have a huge amount of stuff in.

Anyway what do you do?

SW Big Mac mince was always my speedy dinner. That or Pasta N Sauce 😂

I also have a tiny freezer so I just keep two in there at a time and if I use them in an emergency then I replace! Other than that an easy and favourite of ours is ham, egg and SW chips as I always tend to have the stuff for that, or jacket potatoes done in microwave with salad?

rice + baked beans+ grated cheese
pasta + broccoli/tomatoes/pepper + grated cheese+ tuna/sardines (optional)
We love pasta so I usually have pasta that needs cooking no more than 10 minutes so dinner could be ready in 15 minutes max while DD is washing hands, changing etc
If there is no cheese ......I can't survive Smile

Heck chicken sausages with low fat red pesto pasta.
Tuna pasta.
Inspirations Birdseye frozen fish
Jacket potato
King prawns with primula cheese pasta
Mugshot
If all else fails scrambled eggs

Depends on who it's for
DD's happy with baked beans on toast/egg on toast so v quick
DH likes fish fingers as fast meal
Tuna pasta -Schwartz do a spice mix - is v fast and tasty

Poached eggs on toast (3 slices of crustless for a b choice) with a pile of spinach. Yum.

I've only just learner how to poach eggs!

Melt In The Middle fishcakes from Morrison's, baby potatoes and mushy peas

Curried lentils pouch from Aldi and microwave rice bag (2.5)

Jacket potato with beans/Tina&mayo and/or cheese if you still have your hexA

Couscous from Lidl (1.5), tinned Mackerel in tomato sauce from Aldi which is syn free and a tin of carrots to put on the side for speed

Egg fried rice with peas

My go to quick meal is microwave risotto , takes about 15 minutes and ha sthe added bonus of being one pot .

Cheeseburger pasta or Cajun chicken pasta. I have ready cooked frozen chicken from Iceland which is free or their 5% mince is frozen and free. I keep some go go cheese in the fridge for the Cajun pasta.

I also keep pasta n sauce sachets in, I usually bulk them out with mushrooms or leeks.

Also, I have some naked rice/noodles and stir in a bag of frozen steam fresh veg. Adding the veg makes me feel like it's marginally more nutritious.

I try and always have eggs in and also have them with spinach. Sometimes I add some chilli sauce to liven it up at bit.

This is what I would have if I'd cooked the kids some sort of emergency tea.

Omelette

Salmon cooked in George foreman - I like it with Schwartz Thai 7 spice and vegetable rice. Really quick and tasty. SW and Heck sausages are a great standby as you can pop them in pasta, have a fry up etc. Omelettes are one of my go tos because I make them thin like an egg wrap and pop inside whatever I have, veg, beans and sausages etc and as long as I've got salad or veg for speed it's fine.

Sometimes it’s still Mac Donald’s for me. A grilled chicken salad (no dressing) and a small fries (5.5 syns) and a bottle of water

Can of mushy peas and sardines or mackerel in tom sauce. Weird for sure but free and 2 mins to open 2 cans and bung on a plate! I just make sure I buy the "ingredients" Grin each time I'm in the shops.

Mackerel or sardines in tom sauce on toast with pile of mixed leaves on side. Very tasty and filling.

Lastest sw mag has the tip of using tinned potatoes, slicing them in half length ways and frying with fry light for quick and easy "chips" - thought that was quite a good idea
