Vegetarian meals and snacks (no fish)

Been doing sw since september and excluding the gained weight from christmas (!) have lost nearly 2 stone which I'm really proud of as some weeks I ate 2 tubs of ice cream and whole boxes of cereal were challenging.

Being a vegetarian I ate well with fruits and vegetables before hand although I have upped my game on fruit snacks instead of crisps etc and bigger portions of salad at tea time.

I was just curious to what your favourite veggie snacks and meals are? I love cooking quorn mince and throwing pretty much any vegetable i have in the pot! I think the diet coke quorn chicken is a definite favourite too.

I also make a replacement of 'chocolate mousse' where i mix a sachet of options with quark and add cherries blackberries to it. Only have to syn the options sachet.

Hello,

I love the veggie paella recipe and the veggie curry recipes and I love the slimming world chips better than normal chips.

I also find for snacks I quite like the fage natural yoghurt because its so creamy. Its 9 syns for the big (full fat) tub but I couldn't eat it all at once.

I'm vegan. I know you aren't but if you joined the facebook vegan slimming world pages? loads of amazing ideas and support and obviously all vegetarian. (just a suggestion, there's plenty of people who aren't full vegan on there) xx

I love curries and houmous, haven't found a homemade recipe I like yet.

Carrots and soy sauce are v nice incidentally

For syns I use a lot on soya yog's, houmous and meat replacements (linda mac pulled pork) but lotus biscuits are v nice (2)

Also found using hexB for choc Weetabix with some soya ice cream/yoghurt, grated dark choc and blackberries can be a nice pudding. Syns vary obviously x

I love making frittata. Cold boiled potato, onions, peppers, frozen peas all cooked in a frying pan until browned. Pour over 5 eggs mixed up with a splash of water and cook through. Usually this gives enough for DH and I to have for dinner with cooked veggies and small pieces for a salad the following lunch.

I make a quick vegetable curry with a pack of prepared supermarket veg ( carrots, broccoli, cauli, baby corn),a tin of chopped tomatoes, a vegetable Oxo cube and curry powder.
It's nice with rice, and maybe a couple of hard boiled eggs.
There's a nice vegetarian SW recipe book, and some good ideas on the SW website.
I'm not vegetarian, but I like lots of meat-free meals.
You might like meals from the SW Iceland range.
Also, Linda McCartney red onion and rosemary sausages are nice, and they are syn-free.

Current favourite meals for the next week or so are:
Quinoa tabbbouleh
Muhamma- made with bread crums smoked spices and walnuts
Freekeh pomegranate and feta salad ( although you could use tofu or hallumi if you don't like feta..
Stuffed cabbage leaves naked in tomato sauce
Stuffed baby aubergine with tahini
Chunky chickpea hallumi and sweet corn burgers
Roasted butternut squash rissoto

For snacks courgette with sumac fries is nice so is battered hallumi or roasted sweet chick peas

I am fab at keeping it simple and quick!

I make scotch eggs with the LM sausages defrost them roll and the flatten add a teaspoon of scrambled eggs a jalapeno roll the 'sausage meat' around the egg spray with daylight and cook for about fifteen minutes

I'm not veggie but we have been using a lot more quorn since doing SW, last night we had this soup and it was really lovely!! We will 100% have it again!
