I have restarted on SW after about 6 months off during which weight has keeps up and I am now heaviest I have ever been, including during pregnancy Shock

I tried a Tom Kerridge recipe that was in the weekend papers (courgetti and pesto with roasted toms) - was yummy and have bought his new book ff ghe back of it.

I know he is low cal & low carbs but has anyone tried figuring out the syns for his recipes?

Anyone else tried the recipes? Any recommendations?

I'm making that spinach pesto cherry tomato courgette pasta thing tonight (the one from the Times magazine).

I'm not bothering with the pine nuts and I'll use 0 fat yoghurt as the cream substitute. The only syns are the olive oil (6, so I might try halving that and see how I get on) and the Parmesan (6 for 25g so will use sparingly)

That's for the whole recipe though so if it does 4 portions it's only 4 each

I really liked that recipe. The courgetti gave me a reason to dust off the spiraliser that's been on the top shelf for the last year!

Book arrived this afternoon - some really lovely looking recipes in there!

I really enjoyed it too. I added frozen peas and served it with chicken thighs.

Let me know how it goes with the book, I might buy it.

Is the chicken recipe made with buttermilk in the book? It looked lovely on the programme

FelixCited · 04/01/2018 21:18

Can you screenshot the recipe for the courgette pesto. I tried googling but it’s blocked by the ST paywall !

I watched his bbc2 programmer last night. The lasagne looked lovely.

I’m having that kfc style chicken tonight, been marinading since yesterday so I’m looking forward to it.

My books not arrived yet though! Is there a store cupboard list in it? Think I need to stock up our herbs & spices!

HeyToTheHo · 06/01/2018 15:51

Ooh let me know how it turns out.

Will have a look at store cupboard list...

Doesn't give a stock cupboard list as such but Key ingredients

Cauliflower 'rice' - bought or home made
Chicken
Chickpeas and beans
Chilli, garlic and ginger
Cornflour
Cream alternative (he means elmlea!)
Dairy reduced/ low fat options of milk cheese etc
Eggs
Fish and sea food
Fruit
Herbs
Hot sauce and mustard
Meat - low fat cuts
Pastry - pre rolled reduced fat (though I would have thought this would be syn-tastic!!!)
Salt and pepper
Spices
Spray oil
Stock

We've got quite a lot of herbs and spices which don't often get used but I've bought herbes de Provence and Italian herb mix

Chicken with mascarpone was gorgeous - not diet-y at all. I worked it out as 5 syns if using full fat mascarpone, 3 if low fat

Just made the popcorn bars which I estimate to be 4.5 syns if portioned as per recipe... I've cut them in half as that's enough for me so just a smudge over 2 for one of mine

I’ll definitely try that one.

The kfc type chicken was good but worked out at 20 syns between the buttermilk & flour, I don’t think it was worth it compared to chicken with spices on the George foreman but it was lovely

Did you work out syns in the lasagne?

HeyToTheHo · 09/01/2018 21:46

Haven't worked out syns for that one yet. Just had the salmon traybake which is gorgeous. Using fry light instead of oil spray makes it syn free (or do olives have syns?!)
