Inspiration for SP

I'm trying to boost my weight loss this week with an extra easy SO week but I'm struggling tbh. Evening meals are ok as I just miss out the pasta/rice/potatoes but lunches I'm lacking inspiration. If usually make a pasta or rice salad but finding it hard to make an SP lunch! Any ideas?

A nice salad, beetroot, peppers, tomatos, shredded/grated carrot, cottage cheese (free and 'P') hams/ chicken, eggs.
Squash chips, SP soups are good too!

@Groove how do your egg muffins not have carbs? Do you have a special recipe?

I use a 6 muffin tin. 4 eggs, whisk them up with salt and pepper. Put whatever you would have in them in the muffin tin. I tend to have spinach, spring onion and ham. So spinach and spring onion are speed and ham is protein. Pour the egg mixture over it then bake for 20 minutes on 160c.

I know others use quark or cottage cheese but I found them too stodgy for me. I like them light.

I like a portion of a SP meal from the evening before, eg chilli or bolognese sauce, with salad or speed veg.Can be reheated in microwave at work.
If having lunch at home, egg and bacon with mushrooms and tomatoes, or stir fried speed veg with chicken or Quorn.

My absolute fave lunch on SP is a 3 egg omelette with ham, onion and peppers (sometimes a bit of grated light cheese in the middle) with a big salad and my HEX B wholemeal toast. So filling.

Also 4% fat burger from Aldi in wholemeal bun (Hex B) with lots of yummy salad stuff in it and a big salad on the side..bit of low fat mayo and ketchup as syns

Remember you get 2 HEX B's on SP days. I usually use it for wholemeal bread twice, then I don't miss other carbs at all
