Looking for inspiration. What is your favourite SW meal?

My favourite concoction, all free is; (all done in a wok cooked in fry light)
Chicken pieces
Courgette
mushrooms
onions
pepper
rice
couple of oxo cubes, salt and pepper
Cook all meat and veg, add rice and seasoning.
It's lovely. I also sometimes use mince instead of chicken (5% fat mince)
It's nice taken cold to work too!

Basic chickpea curry

Basmati rice

Sweet pulled chicken. do it in slow cooker


2 chicken breasts (whole to start)
1 tin chopped toms
1/2 pink lady apple chopped into little cubes
3 cap fulls of balsamic vinegar
1/2 onion chopped
3 teaspoons paprika
2 garlic cloves
2 tea spoons tomato purée
Bit of salt and pepper
tea spoon spoonful of sweetener sugar

slow cooker for 6 hours so far... after 3 hours I pull apart the chicken with 2 forks so it had that 'pulled effect'

thats it. omg its delish!! I have it with jacket pots and salad. xx

This time of year, chicken casserole:

Chicken thighs (minus the skin) in the slow cooker with chicken stock, plenty of garlic, onion and/or leeks, mushrooms, bay leaves, splash of white wine vinegar. Optionally a couple of bits of lean bacon as well. After 4h or so the chicken falls off the bone, mmm. Then serve with rice and green veg (broccoli, green beans are both good)

The Fragrant Vietnamese Chicken is delicious. In fact, I've pretty much cooked my way through the entire 'Taste of Asia' cookbook!

Can only find a for it, but it's really just a chicken stirfry with spring onions, garlic, chilli. It also has lemon grass, star anise, cardamom seeds and a few other bits and pieces. Takes a bit of time to chop, but well worth it.

At lunchtime today I had spaghetti carbonara. The sauce was made with quark and an egg yolk with a little mustard powder, heated very gently. I added bacon (fat trimmed off) and mushroom, stirred through some chopped spring onion and served with rocket and tomato salad. It was bloody gorgeous!!!

The SW lasagne is surprisingly good, for having % yoghourt and a bit of low-fat cheddar making up the cheesy white sauce Grin

I add in a chilli or two, and a couple of Tesco's red wine sauce pots.

The nacho feast is very easy to throw together, with your own combination of wedges / mince or chicken / cheese / veg / chillis

Cheese sauce also had a couple of eggs .... thought it had to be more than just yoghurt Blush
