Soup Stock

Hi , I've never made fresh soup before but would like to make potato and leek to start .. I'm just wondering how you make your stock or which ones do you use 😊

Hi Loopyloo. The main thing is not to add any fat. Potato and leek soup is lovely made with real homemade chicken stock, if you chill the stock overnight in the fridge it's easy to scoop off all the fat before use. Just boiling the stock with a few diced floury potatoes and sliced leeks and a diced carrot and lots of black pepper makes a lovely free soup. You can leave it as is or blend until smooth. It's nice with chicken stock cubes too. Hope this helps!
