I once had this and it was great. Think it may be an African dish. Does anyone have a recipe or alternatively know anything about cooking yams.plaintain and such goodies?

Plantain banana is in the vegetable section in the SW book, as are yams and cassava, so free as long as cooked without adding fat

Not something I would have thought of cooking, but it sounds delicious.
