Hey. I got some lovely reduced aubergine at the co-op this evening. Can anyone recommend a syn free main meal please?

I don't like it so I cut it up small and add it to pasta or curry or something, lol

Ratatouille, or roasted with peppers, onions and tomatoes, mousakka, Imam bayeldi -stuffed aubergine, all have sw recipes .

I bought an aubergine specifically to make this because I have a load of orzo to use up. If you don't have any orzo, I'm sure it will work with any pasta shapes.

Just leave out the oil/use spray oil/syn the oil and count the cheese to make it SW friendly.
