Hiya - easiest slow cooker recipe ever coming up! Makes a really nice, american style Chilli con carne.

You can cook it straight from freezer/cupboard...

500g 5% fat beef mince (frozen)
2 cups of frozen chopped onions
2 cups of frozen chopped Peppers
1 jar of red (hot and sweet) Jalapenos
2 tbsp tomato puree
2 x bovril/oxo cubes
1 tsp chilli powder (optional - depends how hot you like things)

  1. Put mince, onions and peppers in slow cooker.
  2. Add the whole jar of jalapenos (liquid and all)
  3. Fill empty jar with water and chuck that in
  4. Add tomato puree, bovril cubes and chilli powder (if using)
  5. Cook on low for 8-10 hours
  6. Stir to break up the mince and eat with whatever you fancy.

We have it with rice, jackets, SW chips or sweet potato wedges and top with cheese (HEX-A) and 0% fat natural yoghurt.

Notes:
I make this from frozen as it is so easy but if you have fresh mince and veg then it works just the same.

I wouldn't add the chilli powder the first time you make it and then you can see how hot it is and add it if you want to when it has finished cooking. Similarly you can add more tomato puree to tone it down a bit.
