right - heres a recipe for quinoa porrigde - i have my almond milk (never had that before) & quinoa (never had that either)
Has anyone made anything like this? is it any good? what you would you do / avoid?
(i've seen it done in the microwave for 30 seconds as well)
INGREDIENTS
1 cup quinoa
2 cups soy milk, almond milk or any vegan milk substitute you prefer
1 tbsp brown sugar (or use agave nectar for a sugar-free version)
1/4 tsp vanilla
dash cinnamon
1 cup diced strawberries (or more!)
optional healthy add ins: nuts (try pecans or hazelnuts), hemp seeds or hemp protein, chia seeds, flax or coconut oil
Prep Time: 5 minutes
Cook Time: 16 minutes
Total Time: 21 minutes
Yield: 2 servings
PREPARATION
Combine quinoa and soy or almond milk and cook over low heat, stirring occasionally, for about ten minutes. Add brown sugar, cinnamon and vanilla and heat for another 5-6 minutes, until quinoa is soft. Stir in strawberries and any extra healthy toppings and enjoy!
Recipes such as this one are a great reason to keep some leftover quinoa on hand. If you have leftover quinoa, just reheat it stove top with about 1/3 cup soy milk or other non-dairy milk until it's nice and hot, then add the remaining ingredients
