Lunch ideas

What do you have that's quick and low in syns?

It's my 1st week and so far doing well but struggle at lunch as I'd normally have a sandwich but use my b for toast with egg for breakfast

Dinner is usually jacket potato and salad/pasta/chicken salad so trying to avoid more salad before I get fed up

On maternity leave so no issues with fridge/oven etc but needs to be quick or something I can chuck in the oven and forget as have a newborn and toddler so not much time

Veg soup is my go too other than salad. You can get the pre prepared veg chopped in the supermarket. it lasts me about 3 days. I also have a lovely recipe for tomato and lentil soup which is syn free

Quiche - Mix 3 eggs and 150g cottage cheese, chop whatever veg you fancy into small chunks chuck in an oven proof dish pour egg mix over and bake at 180 for 30 minutes(ish) until set.

Soup - I make a different one each week to cover one nights dinner and 2 days lunch.

Sandwiches - I save my B choice on these days and have low syn cereal and fruit or fruit salad and yogurt for breakfast.

I often have a "full English breakfast" - scrambled egg, bacon and baked beans. Grilled tomatoes and mushrooms if I have them in. Sometimes add in a low fat sausage (1 syn each).

Omelette and salad is another good one - add ham to the omelette as the extra protein is filling, as is a bit of cheese if you want to use your healthy B or syns.

Another favourite is to peel and cube a sweet potato, dice a red onion, add some lentils and tomato passata and bake in the oven. I sometimes add a couple of slices of halloumi cheese and syn those.

Jacket spuds, beans,, cottage cheese if out (can always get this in a cafe)
Pasta , veg sauce, Quorn meatballs
Bean chilli

I am struggling to get back on track with sw. Have lost 8lbs need to loose another 12lbs. I need some motivation!!!

You can make a sort of pasta quiche which is surprisingly nice. Just cook a pack of pasta n sauce tip it into an ovenproof bowl and chuck 2-3 beaten eggs over. Sprinkle on some cheese if you want as your HE or mix some veg through and bake in the oven for 20 mind or so until it sets. It can be served hot or cold with salad. It is very filling.

Tomorrow I'm having rice with chicken and spinach. I will be adding a couple of syns by stirring in some sweet chilli sauce.
How about fruit and a free yoghurt for breakfast and the sandwich at lunch?
Iceland have syn free sausages - you could make a sausage pasta with a tomatoey sauce, All completely free!

Make a bigger portion of your dinner each evening and keep the leftovers for lunch the next day. Gets a bit same-y but easy to do now and again.

This months Slimming World magazine has a whole page on bought lunches- what to pick and what not to pick for all the major supermarkets and food places such as Pret. Really useful article.

I sometimes make an omelette with peppers, or stir-fry with veg and so sauce, or if I'm in a rush the 1% fat mugshots are free Grin
