amazing slimming world dinner

I am eating the most amazing curry piled on top of chips. And its free!

Chop up 2 onions and fry in frylight till soft.
Add a couple of finely chopped red chillis, a couple of crushed cloves of garlic and a 2 cm piece of ginger, grated. Fry for another couple of mins
Add 2tsp ground cumin, 1 tsp ground coriander, 1 tsp tumeric, 1-3 tsp hot chilli powder (depending on how hot you want it, personally i stick with one and its hot), a tsb or 2 of curry powder, cook for a minute
Add in 3 diced chicken breasts, cook until sealed and starting to brown.
Chuck in a chopped pepper, and a tin.of chopped tomatoes (sometimes i add an extra half a tin of tomatoes), simmer for 30 mins or until chicken is cooked, adding a tsp garam masala after about 20 mins (i forget this frequently, its still delicious) and at the end still through a tbsp of lemon juice (i also forget this most of the time)
Pile onto rice (or chips)

Should serve 4 easily.

Thanks for the recipe - sounds lovely - keep meaning to try a curry. Suppose for any newbies you should explain about SW chips too!

Slimming world chips
Chop potatoes into chip shapes, boil for about 10 mins, spread on a baking tray, spray with frylight and then bake in the oven until crispy and golden brown. You can sprinkle salt and pepper, chilli powder, curry powder, garlic powder etc on before you cook for flavoured chips.

Also, last nights dinner was chilli con beanie.
Chop a large onion, a pepper and a handful of mushrooms, fry in frylight till softened (i cook onions till they are soft the chuck in the peppers and mushrooms as i like a my peppers crunchy)
Add 1tbsp each of cumin, smoked paprika and chilli, fry for about a minute.
Add in 1 400g can of mixed beans (or in my case 180g can, a handful of cooked chopped green beans an extra couple of tbsps of kidney beans and a couple tbsp of sweetcorn - i didnt have a big enough tin.of beans) and some tinned chopped tomatoes (i used 1 and 1/3 tins). Simmer for 20 mins.
