Ladies who lunch

I've got a friend coming for lunch this week and she's following the Extra Easy plan. I've got a fruit platter for dessert as I understand she can have unlimited amounts of most fruit, but what can I give her for lunch? Ideas for hot or cold lunches would be great, as we get together frequently and I struggle every time. I don't mind cooking, but preferably not while she's here - it's chaos with our little people there, too! So anything that can be prepared in advance or reheated would be great. Many thanks.

Any potato, pasta, rice or egg dish cooked without fat or dairy

Baked pot with chilli/tuna and side salad, fat free dressing?

No sandwiches unless you ask her if she can save her B choice (wheat)

Thick Omelette with veg in cooked using fry light instead of oil and no cheese

If she's planning on eating out its likely she'll have saved a few 'syns' so a bit of mayo or something slightly off plan shouldn't be too concerning.

You sound Iike a nice friend supporting her diet..

Steamed salmon, veg and either boiled potatoes or couscous

spaghetti bolagnaise

Jacket spud, salad, beans and cheese (ask ger to save her a choice)

Salad with egg or lean meat/ tuna

stew in a slow cooker

veg soup
