My little one is about to turn 4. She is a horrendously restless sleeper who still wakes a few times a night and needs to come in my bed for a while or me in hers to settle again. We were co sleeping as it was easier but I physically cannot share a bed with her anymore.
She wriggles, tosses about, takes the cover on and off repeatedly, sits up, talks, grinds her teeth, snores, appears to stop breathing momentarily before huge snorts and grunts, seems congested when completely fine in the day.
I'm going to go to the GP as it has become relentless all night long now and I don't know how she is functioning the next day but I just wondered if anyone else has experienced similar and could share any outcomes.

I’d just book a GP appointment. Maybe record the sounds she makes though your description should be enough. It sounds like her Adenoids but just get it checked, probably an ENT referral needed.
