1 year old hungry in the night?

We've worked really hard, my lo and I, on the sleep using gradual withdrawl / retreat but are now having a real problem some nights.

He eats really well during the day but last night I am sure he was hungry from about 2am onwards. I refused to feed him until 5am as I am trying to gradually increase the time between feeds at night with the aim for him to have a morning feed at about 6.30am. Anyway from 2am onwards he would barely settle and when he did he would only sleep for about an hour but after I fed him he did not go back to sleep. At breakfast he literally ate me out of house and home. This type of night happens fairly frequently.

So will an evening snack help him and if yes what should I give him and when? He has tea between 5.30pm and 6pm and goes to bed at about 7.30pm after a bf.
