Why and how do I change my answer? I clicked off on everything then the option seems to have changed and I've said yes to harvesting everything from me which I absolutely do not want.

If you'd like to change your cookie settings, you need to clear cookies for the site and then you will be asked again what your preferences are. Here's the instructions for Chrome:
