We met in uni and began a sexual relationship very soon. There was no real friendship and the sex wasn’t good at all. We stopped soon after. But we stayed in touch mainly out of boredom and we both had jobs that allowed us to talk on the phone all day. Slowly we began a friendship and we are best friends now. After 5yrs of Us just being friends, We had sex again after a drunken night out. The sex was AMAZING, I assume for both of us as he made an effort to please when he hadnt ever before. 
what do you make of this And can we ever go back to just our plutonic friendship?

Yes.

I've been in this situation and a friend became a FWB and is now a friend again, although I'm not saying we'll never have sex again.

Things can only be as you want them to be if you communicate your desires/needs/limits to the other person. Therefore you need to sit down and frankly discuss what each of you wants to happen.
