Will writing - school age chn

I am in the process of writing a Will. Can I assign a few people for executors and trustees or is it better 1 person and then if that person is not there, another person etc?

I thought for a moment this was a school age challenge to write their own will!

YOu might be better asking in 'Legal' or even 'Chat' rather than Secondary Question.
