This should probably be under recipe topic but what on earth do you do with quinces please?

I have a glut!

Not even sure that I like the perfumed flavour!

Does anyone have a tried and tested recipe please?

A friend had a huge glut from her tree, which she gave me - so made buckets and buckets of Membrillo. I understood it’s good with cheese but pleased it may also go well with pork as clearly I am on the lookout for a way to use this all up!!!!

I have quince gin on the go, will bottle it at Christmas but an early sample suggests it’s going to be very tasty. I made some quince jam too which is rather lovely.
My sister has got quinces soaking in rum as well, not sure how that’s going.

I put mine in the recycling. Never thought we had the right climate to produce an edible quince. Intrigued to see if I've been wrong all along.

So wrong!!! Quinces have been grown in Britain since the 13th century. We have some lovely varieties.

we make: quince cheese, jam, jelly; poach them; add them to apple; add into roasts (think apples with pork)

I've also got 100s of medlars. The only thing I can find to do with them is jelly.

I would make medlar ‘cheese’ (a thick jam)- delicious with actual cheese. You need to bite them first (allow them to rot a little)

Nigel Slater has a good one where quince are cooked whole, so no chopping or peeling the hard fruits. Search for quince + ginger + Nigel, has delicious optional ginger biscuit/marscapone with it. Quince jelly seems like a lot of work.
