Went out on a date with a guy last night, he messaged me good night, I have been so stupidly busy today so didn’t get the chance to say night. I was thinking of texting and saying “sorry fell asleep was knackered todays been non stop, hope you had a good day”

I think if the date went well and you want to see him again you'll need to be a bit clearer about that. Poor guy probably thinks you're not interested! I would ask how his day has been to initiate more conversation, and also say you enjoyed the date - if you did!

He text you to say goodnight
You didn't have time to message back until now.
Is this not correct?

The text is fine, but I would put the last bit as a question, "have you had a good day?" So that you are keeping the dialogue open

Okay, I stand by my previous comment then. Tell him you enjoyed the date, apologise about the lack of response and ask him how his day was.
