In the separation agreement include a clause to provide your respectives notices of assessment every year (assuming you want to know it because there is child/spousal support).
Now, if the other party is self employed it can be tricky if he decided to not declare something or divert the money.

We are separated and have DC. Divorce on the cards. I'm not sure he will be honest about finances or anything at all.

Your solicitor could tell you about forensic accountants. Usually used in high net worth cases and it will cost you but if there is anything to find they will find it.
