Why not pop over to the www.periodproperty.co.uk website and ask on their forums? Everyone there is an owner of an old house, mostly listed, and they have some very knowledgeable people in each region.

From my own experience, I wouldn't expect any surveyor to spot all the problems, though, as there's a limit to how much investigation they'll do. They won't tell you how easy or difficult it is to fix the problems either.

Basically, you will get a long list telling you that the whole house is falling apart. You then buy it anyway. (When your solicitor says 'I don't mean to be rude, but the survey is rather... negative', you know it's looking bad.) You then realise your house really is falling apart and the rest of your life and all your savings goes into keeping it upright. On the plus side, people who love old buildings are incredibly helpful and interested, so you get far more help and interest than you do for most houses. But you really need it. It is a hobby rather than a house, and although I don't regret buying ours, DH (who was the one who fell in love with the house) does occasionally regret it when he sees the list of tasks to be done.
