should builders clean the site up before they finish the whole job?

have had the builders in doing the kitchen ... all looking good but the place (floor, windows, insides of new cupboards) is filthy. What state can I expect them to leave it in when they finally pack up their tools and leave next week?

I expect them to leave things passable, but not actually clean. That is, they will sweep the floor, usually wipe over surfaces, and mop the floor, but when you've had a lot of work going on, that really doesn't get anywhere near actually 'clean'.
