Kitchen refurb - must haves?

We're planning a refurb of our kitchen.
It's a small galley, equivalent of 5 cabinets each side. Budget will get us more than budget but not top end stuff.

I've got some ideas but, before we meet a designer, what would you recommend are must haves? Or what did you do/get and wish you hadn't?

Deep drawers, a drawer under the cooker, cupboards to the ceiling, small bins under the sink for recycling and general waste. Floor to ceiling pantry cupboard with pull out drawers and shelves.
