Remortgage and payments.

I really should know this, but if I were to remortgage on 1st of the month (the same day that I normally pay my mortgage payment), would I have to pay that month's mortgage payment?

Usually yes. Unless you agree on a new date with the provider during the remortgage process.

So if I'm switching providers, I still pay the mortgage on the day it's totally paid off by the new mortgage?

You can agree on a different payment day with the new provider. Just bear in mind that the first payment may be a bit higher if you push the payment day forward as interest and principal repayment don’t stop being accrued during this gap.

I don't understand that. Surely the payment will just be a month later. So if I normally pay on 1st, the new mortgage clears the old mortgage on 1st, then a month later, on the 1st of the next month I pay the new mortgage.

The redemption statement is up till 1st which means I'd entirely clear my old mortgage on that day, then start paying the new one the following month? Why would I pay off money on the new mortgage the day I took it out?
