Paying option for gardening and landscaping?

Hi, I need to have my garden done with a patio and turfing. The gardener gave quote for £5000. He asked to pay half of the amount as deposit and half at the end which I am not comfortable with. My question is that is there any safe way of payment where in case the gardener does not do work as planned that it can be claimed back without any issue? Thanks.

Don't know, tricky. I wouldn't be keen unless you know the gardener? Is there any way to pay for materials, so at least if anything went wrong they would be yours?
