Is it the hob which needs changing or the gas supply

Our gas hob has always been a bit temperamental about whether it ignites and, once ignited, might just go out. In the last few weeks, it's got ridiculous. At lunchtime today, I could only get the smallest of the five rings to do anything which wasn't ideal when trying to cook lunch for us all!
I don't actually know what I need to do to sort it out. When we had the kitchen replaced 11 years ago, we kept the hob as it was the perfect size and, at the time of re-fitting it, the gas engineer said he thought it was on its last legs.
Also, the hob is in a granite work top which I don't want to mark or have to replace.
Any ideas as I'm stuck!

Has it been checked by a Gas Safe engineer in the last 11 years? Presumably as you have gas, you have a gas boiler. Has this been serviced in this time, as the same engineer should be able to do both?
