Range or hob/built in oven

We are just starting our planning journey with our kitchen.

We current have a gas stove with hob and oven.

Any thoughts on a gas range or induction hob and built in ovens and what type?

One thing to consider is the environmental impact. Gas hobs are highly inefficient, I believe around 60% of the heat is dissipated and does not actually heat the pan/cook the food. Induction are very highly efficient (90%), so need less energy, and have a much lower environmental impact.

We’re currently renting while renovating our house, and our rental has an oven under the gas hob. I hate that set up. Whenever I open the oven door, I’m hit in the face by massive heat. If I’m cooking at the hob and the oven is on, the heat is unbearable. Taking heavy things in and out of the oven is a massive pain, compared with eye-level ovens.

In our new kitchen we’ve gone for induction hob and two Neff slide and hide ovens at eye level.

We went for a 30cm gas wok burner and an 60cm induction with 2 side by side eye level ovens. Induction is fabulous for kids to learn to cook on. The pan handles don’t get hot, there are no flames licking their sleeves. But the glass chipped and needed replacing - so less robust. The eye level ovens are safer too. My gas powered wok was in hindsight a luxury - not used as much because one of my kids hated Asian food.
