Worth getting a new thermostat/controller given energy bills?

We're just a year into our new house and it's got a very old consumer unit where I can only programme heating and hot water for Mon-Fri or Sat-Sun.

Given the energy bill increase, we can (reasonably) easily do something like not having hot water a couple of days a week. Young primary kids don't need a bath every day, and me and DH work from home so can skip a shower every now and then. And the dishwasher means we don't need hot water for washing up.

But my unit won't let me programme something like that - E.g. hot water programme for Mon,Wed,Fri, but off on Tue,Thu.

I assume newer ones have capabilities like this?

How expensive and difficult is it to upgrade the consumer unit? Would anyone think it's ultimately worth it, to then be able to cut back on bills?

It was always on my list to upgrade it as it's a nightmare to manually programme it (in our previous house we had one that I could use an app on my phone, which was brilliant), but pretty low down on the list.

Yes you can get ones with those capabilities.
You could also look at smart ones with app controls - oh, just saw you mention that at the end of your post.
No idea about the pay back period.

Mine was fitted by a heating engineer but hardly took any time.
The bloke I'm seeing fitted his own.
I don't think they are difficult.
