I want the ikea metal splash back in gold to run along the work top but I will need three parts? Will it look OK even if there is a small join part?

depends on the skill of the fitter.

If the plates are a perfect fit, there will be a tiny joint which you could conceal by rubbing transucent silicone sealant into it

If the wall is sufficiently uneven for the plates not to press tightly together, a person skilled at metal cutting could shave off enough to make them fit. I couldn't do it. Factory cuts are likely to be straighter and squarer than fitter cuts.

Or, you can have an overlap joint, or a strip over the joint, either of which which will be visible but not unsightly. Try to have the single large piece over the worktop where it will be most seen, and the joints out of the way near the corners or other obstructions.

Thermal expansion and contraction will cause the joint to open and close a bit. Somebody can work out how much, if they know how long the wall is, and what the metal is.
