Talk to me about your flagstone (esque) floors?

We are in the final stages of our extension/ refurb. The utility / mudroo. comes straight off the patio and will be the main entrance for us/kids. We live in the back end of beyond so mud room is quite literal.

I had planned to put down a grey Morrocan tile style vinyl roll but because this would be laid under all the units plus the amount of waste means the cost saving is not nearly as considerable as I'd hoped.

So I'm considering flagstones but I know nothing at all about them so please help.

Are they suitable for less even floors? Its chipboard flooring but not a perfect level... it is for this reason that we can't do thinner/lookalike tiles.

Prices seem to be around £35/sqm, does that seem right? (DH will be laying them so additional labour costs are moot).

Are some varieties essier to keep clean than others (I vaguely remember someone on here talking about what a pain their stone floor was)?

We will have a lot of built in shaker style units in a light grey. The worktops and bench area are a light/natural oak.

Very grateful for any advice/experience.
