Hipped roof to gable end

Hello, looking for some experiences of changing a hipped roof to a gable end and adding a dormer.

Our roof liner has degraded past the point of usefulness but to replace it the tiles all have to be taken off and relaid/replaced, so looking at more radical changes if we're going to be tinkering anyway. To make the roof space useful the internal post system would need to be changed. I'm assuming there's enough head height as other houses on the street have conversions. It would make sense to change from a hipped roof to a gable end to maximize the available space.

I've looked online and it seems like a crane comes along and lifts the whole thing off then replaces it? If you've done something similar can you tell me how it went and how disruptive the whole things was? Did you stay in the house whilst the work was being done or was it a move out for a week job? If you ave any costs that would be helpful too. We have a 1930's very standard three bed semi. I have this crazy idea of an staircase built externally over the garage to save space inside so going to need an architect most likely. Ah... I think I've already talked myself out of it!
