I have never bought and sold before. I have accepted an offer on my property. 100k from sale will be my deposit next house. I am porting my mortgage of 52k and over the phone my mortgage company agreed they will top up to 85k. So when i make an offer on next house what do i need to physically produce to prove funds?

Put the amount you want to 'reveal' to the EA in a separate bank account, for which you can print off the balance or a statement. Do NOT reveal any more funds than you want to reveal to pay the price you want to pay. Otherwise the EA will try to screw every last penny out of you that you have revealed you have.

If the OP has agreed the sale of her house presumably she will be looking to find her onward purchase and do both at once. You can't port a mortgage unless you move to the new place straightaway.

Therefore there won't be funds in a bank account to show anybody @FabulousSophie.

I wouldn't worry a great deal OP - the EA will check your house is for sale and marked 'sale agreed' or similar online. In terms of proving you can get the extra borrowing, then most mortgage providers have online mortgage calculators, your current one probably does, and you can get an agreement in principle online without a hard credit check being carried out - in fact you can see what your max is then get one in the ballpark of houses you are looking at (i.e. for less) to show the EA. Ime the EAs are only interested in that once you've made an offer and some don't check. It's worth looking yourself what else is out there because there may be a better deal available even if you have to pay early redemption fees to your current provider.
