Sink experts? Reusing an undermounted stainless steel sink as inset?

There seem to be some very knowledgeable people in here so I hope someone will be able to help.

If a model of stainless steel sink can be both undermounted and inset, and if the cut out in the worktop is suitable shape and size for either option could the sink be first installed undermounted and later changed to inset? Would there be any damage from adhesives etc?

First double check that the same size cut-out can be used for both inset and under-mount, even if it can that's going to take some accurate cutting as there can't be much margin of error in that design. To directly answer your question, if you just use silicone or a hybrid polymer sealant as most fitters tend to use and it is fitted with care so the brackets supporting the under-mount do not distort the rim then (in theory at least) you should be able to clean it off and re-fit it. It will take a fair degree of care to fit, as you are most likely aware, stainless scratches so easily and scratches are difficult to remove when you are trying to match the finish of the existing sink.

It's an unusual question and I am presuming that you are unsure if an under-mount would suit you and are looking for a contingency plan. Personally, I can't see why you would want to go back to an inset but maybe that's just me. :)

Thank you kitchenguy. I am thinking ahead incase we get a lot of chipping around the edge of the sink that can’t be repaired. The models of SS sink we are looking at don’t look too bad inset, but we hope we will have no problems and it can be kept undermounted.
