Sealant INSIDE the shower is a no no

I read. Well for the horizontal bits anyway. We've just had the shower regrouted and sealant redone and the man covered the aluminium profile bits in sealant.

Has anyone had any issues with this. I might need to get him to come back and take it off.

Yes, the water runs down inside the hinge and has to run out at the bottom inside. If you deal it then it'll fill up and overflow goodness knows where.
Basic stuff for a fitter

our grouter has just done this so I suppose I need to get him back to cut it off. Is it as simple as that? Can we do it.

Yes some kind of scraper or knife will do it, just don't damage anything.
You can get silicone eater gel that will dissolve the last thin layer
