Healthy renovation meals!

Hi, we're embarking on renovations and will be kitchen free for four weeks...will have George Foreman grill, microwave and toaster!

Apart from baked potatoes and poached salmon, does anybody have any advice for easy healthy meals?

Asian style soup with stock, noodles and finely sliced/grated vegetables made in the microwave.

Ideal time of the year for picnic meals put together from bought goods.

Cous-cous is easily done in the microwave, pouches of microwaveable rice will be useful, as will pouches of mixed grains/lentils/chickpeas.

Will you have a freezer? Can you batch cook stews/soups/chili/curry to microwave?

Buy a cheap slow cooker. Can do pretty much anything in it. Curries, stews, fajita filling, full roast chicken, soups, pasta!

The hardest is starches, veggies can be raw, a meat done on the grill.
couscous as said above, rice noodles can be made with out a stove top if you have a kettle: soak them minimum 2 h up to 24h, then thow goiling water on them for 10 sec. Instant rice tastes awful but could be made easily.

It's a great opportunity to learn new salad recepes, also google raw recepes, some are fantastic like the raw pad thaï.

Are you doing the reno yourself? If so you might be too tired to cook, make as much ahead as you can.

I cook so many healthy dishes in my slow cooker from pasta bake, chilli, curry, jacket potatoes even dauphinois potatoes which is most definitely not healthy but is yummy

You can even cook cakes and pizzas in them
