How do you clean / polish yours? Ours are wide oak boards in every room apart from the kitchen and bathroom.

Ours are sealed oak. I don't polish them, so they are not slippy. To clean them I use anti bacterial floor wipes, found in all supermarkets.
I bought a gadget in Wilkos that looks like a flat headed mop, but you attach the floor wipe to it's grippers.
No water involved and clean floors!

Oh, now I have footboard envy.

Generally, the less water, the better. Just hoover.
If really needs more, use a soapy wood wash, so that you're adding a bit of wood nourishment as you wash.Very wrung out mop.

Beware of polish.Must be nonslip. It's a lot of work to upkeep, better to have sealed floors that don't need it.
