Howden's rustic wood worktop: oiled or varnished?

We're about to install a Howden's kitchen with a rustic wood worktop. What's the best way to increase its durability? Is it oiling and varnishing it or just varnishing?

Any recommendations for a particular varnish? Thanks!

I always oiled mine. Varnish can wear and begin to look patchy, over time.
Before installing it has to be oiled/ varnished on both sides otherwise it will warp. We did waterproof the underside with varnish, around the sink and above the dishwasher where it didn't show, extra protection.

Thanks JT; do you remember what kind of oil you used? Do you re-oil every 6 months?

We used Ceder oil, four coats each side before installation. Then every 6 months. Still looked as new 8 yrs later.
