Kitchen floor - vinyl over tiles?

I'm getting a new kitchen at the end of this month and still need to sort out the floor. The existing (ceramic, I think?) tiles are in good condition but I don't like the colour + one wall of the kitchen will be freestanding and will need floor covering all the way to the wall for ease of keeping the floor clean.

I've so far considered getting the old tiles removed and new tiles fitted. But have come across a sheet vinyl in a lovely pattern that I really like (cushion vinyl sheet flooring) and now I wonder if it would be possible to lay the sheet vinyl over the top of the existing tiles? It would be many hundreds cheaper, much quicker to get done and probably easier to keep clean than tiles with grout... Has anyone done this? Did the lines of the old tiles eventually show through? Can the tile floor be leveled first by filling the lines of grout with something so that they won't show? Underlay? Help!

You'll probably want some latex on it sadly not as kinky as it sounds We have vinyl on our kitchen floor (for another 4 days) and that's been laid on latex over a quarry tiled floor. It suppose it'd have the added benefit of ensuring the floor is completely flat/level.

we've got something like plywood in our bathroom under our vinyl. might be the answer?
