Stripped Wood - Do I wax?

The Victorian house I've moved into has stripped wood literally everywhere, floors, doors, skirtings, picture rails staircases - there's shed loads of the stuff and the house is big. Oh and the kitchen is wooden too!

Now, do I wax this (it would take forever and a day) or is there something else I ought to be doing with it? I've come from gloss paint, shiny surfaces and laminate flooring so I'm clueless. On the plus side, this house sure doesn't show the dirt.
