Shiny varnish on York stone

Does anyone know if it can be removed & replaced with something less like a skating rink shiny and more matt?

I like the stones but hate how shiny it is, and it's on a large area.

No idea! But i would call a stone mason and ask. I suspect you would need to (at least) abrade it to remove it and/or the sheen. Good luck
