How would you dress a window in a Farrow and Ball type kitchen ?

It isn't overlooked, and is big and tall in a victorian type house. Would you just leave it without curtains or a blind ? Or what sort of fabric would go ?

It depends where the window is. If its near the sink or hob I'd leave it without anything, but if its near the table for example, I'd put something up, for cosiness at night.

We had a cream wooden venetian blind in our last kitchen (a tall Victorian window) which looked good but it was for privacy really.
A simple roman blind would work well, but you will need to wash it so you'd have to use washable fabric.

its by the table, overlooking fields.

Another vote for wooden venetians - either plain or painted.

I would go for a roman blind in a plain dark linen type fabric.

Roman blind made with Vanessa Arbuthnott fabric, or Ian Mankin.
