Renovating a pantry - any advice?

We have a small pantry cupboard, about 3ft x 3ft, in our 30s house. It's totally fab for storage and keeping things cool but is messy and unhygienic as it hasn't been touched for years. We're getting the kitchen done so it's time to renovate the pantry too. It has lots of crumbling polystyrene tiles on the walls and various holes that need filling as the previous owners had a washing machine plumbed in there and mice now get in through the holes during winter! They were rather fat on dried fruit and sugar before we realised last year!

Anyway, a few specific questions:

  • Does it need polystyrene tiles for insulation do you think, or is it fine/better just plastered?
  • It has narrow wooden shelves on 3 sides, I was just planning to keep it like that but anyone got any bright ideas on other things we could do?
  • It has a small non-opening window on the north facing wall. Is it worth keeping this or is it better for food storage purposes to black this out?

Any other tips on making my pantry lovely? DH wants fairy lights a la Nigella, but while I think that's just a teensy bit ridiculous he may be willing to consider more crazy ideas... :o
