New knobs - help needed (DIY question, honest)

I bought some new knobs with a fitting like this to cheer up an old chest of drawers.

Thing is, screw fitting is far too long and being a DIY incompetent I can't think how to shorten it/cap it off safely without leaving sharp edges.

Can anyone more clued up than me offer any thoughts? TIA!
