wooden kitchen worktops that don't "yellow"

We are soon to be having a new kitchen (yipee) and would like wooden worktops, but I would really like some that don't "yellow" with age - does anyone know of any type of wood suitable for worktops that don't change colour, please

Ooh, and I can recommend Barncrest, which in turn I was recommended by a fellow MNetter (cece, I think it might have been). We have oak from there (the butcher's block sort) and are delighted with it.

We've had Ikea's oak worktop for 6 years now and it's fantastic. An annual go over with Danish Oil is all it needs to keep it looking good.

we have american black walnut from wood and beyond and it is very nice too. Not nearly as dark as in their photos but a very rich and deep colour. lovely.
