Please talk to me about stone tiles

Trying to decide on tiles for bathroom and kitchen. I love the look of the real stone tiles which are around at the moment (or possibly always, I've never looked at tiles before ) but am wondering (1) if they're a PITA to keep clean (especially if being used behind kitchen counters) and (2) if they're a faff to maintain (do they need to be sealed and stuff?).

Any advice/info would be much appreciated!

We have travetine stone tiles in our kitchen and I love them, they were sealed but really easy to maintain.

Thanks, it was travertine I've been looking at Do you have them behind your cooker or do you have a splashback?
