What is this bloomin' thing CALLED? Plumbtastic gurus needed over here please.....

OK I think its a straightforward question, but I have no idea how to get at the answer via Google.

Could one of you lovely people tell me the name of the fitting which is on the pipework going to both hot & cold water taps in the kitchen?

Imagine a screw head on the front of each pipe. It obviously opens and closes the water supply like a mini stopcock.

WHAT IS THE DARN THING CALLED? PLEASE?
I would be so grateful if you could name it.
